Working their usually packed weekday lunch hour on Thursday July 10 Kirsten Herrera-Root and her husband Rich Root are co-owners of Mi Luna Cuban Cafe in Olympia, Wa.. Herrera-Root, who grew up in Olympia, moved back to the capital a couple years ago with her family and opened the restaurant in early April, 2025.
